All pasta is prepared with high-quality flour and left to rise for 48 hours using "la biga" and autolysis techniques. Ingredients are chosen with care and attention to seasonality. The starters are a tribute to Italian tradition, a journey of flavors that ranges from risotto to polenta and the essential mozzarella in carrozza.
